Thanks once again DrByte. Yes, just tried sending *other* emails to the test account and they are also non-HTML. But when I goto Admin>Customers>Edit, I can see "HTML" is checked for "Email format option (Please see attached screen shot)
It is clear that the system is sending text only emails inspite of "Use MIME type HTML" set to true under Admin>Catalog>Email Options.
I wonder what might be causing this bug...
Turn on Email Archiving, and use the Email Archive Manager addon to see whether Zen Cart is actually sending the email out with HTML content in it or not. If ZC is preparing and sending HTML content but the HTML part is being stripped off by your email server before delivery, then you'll need to deal with your email server administrator to fix that problem.
