We're looking into new hosting now -- Dreamhost won't let us upgrade beyond 1.3.9h so....
I also have someone writing a script to monitor the mySQL database for admin changes so that if it happens outside of the admin console, like it did this time, we'll get a notification anyway. Like Tripwire but something we can actually run prior to changing hosts.

Do you mean that they simply don't offer a "one-click install of v1.5.0"?
If so, that has nothing to do with "won't let us upgrade".
An upgrade should be done MANUALLY anyway. You should NEVER use a one-click "upgrade" option provided by your hosting company, at least not with Zen Cart v1.xxx. Doing an upgrade that way would break your site for sure.
A proper upgrade is done this way: www.zen-cart.com/upgrade
Or is there something about Dreamhost's servers that has had them SPECIFICALLY tell you not to upgrade to the newer more secure version?.
