There are some very good video tutorials at Apsona...
You may have misunderstood the need to have OPTION NAMES already existant in your database before you can use Apsona to load Option Values and assign them to products.
But we routinely use Apsona to load sites with hundreds of complex product options...
You might want to set up a TEST AREA (we do) in which you can play around learning these tools.

We also make extensive use of Color and Size for our dresses, and have used Easypopulate for along time now.
Sizes not so much once we learned that we can make a "dummy" product with the desired sizes and copy them across a category. This works if all products in that category share the same size range, as ours normally do.
Colors: extensive use of easypopulate. But we are also just becoming familiar with the new EP 4 for zc 1.5. (And did I read recently that another EP is upgraded for 1.5?)
Using Chadd's basic attribute sheet for EP4 I've successfully uploaded colors to dresses; and even when the color value did not previously exist. Some EP's did this, other's didn't, as I recall.
Practicing on a test site is a good idea. Next best, practice on a test category on your site. Good thing with EP4 is that you can upload/download by category. Back-up DB before every EP upload! Even now I sometimes make a mistake and need to undo it on my live site. One of the DB back-up mods is also very helpful here.
I've looked at Apsona a long time ago and also didn't figure it out. But with Schoolboy's recommendation, I intend on taking another look.

I also have a large database to update regularly and I am ok using the Easy Populate function to update descriptions,prices etc using the csv grids...really good.... BUT I cannot work out how to update attribute prices...it is driving me mad as I am having to do it manually and it takes ages. So I have for example a round cake tin with 4 option values..6",8",10",12" so all have different prices....surely Zen cart has the facility somewhere to let me do this.
You answered your own question... All have different prices, so if each one is different, you can't have a "mass update" feature.
We have used Apsona to update attributes quite successfully, so if you EXPORT the products via the Apsona Product Attributes function, it will throw out a file with all the product ID's and their associated Option VALUE ID's and the current price of each ID.
Just change these in the spreadsheet and re-upload via apsona.
We had about 3000 products (with scores of attribute option values) to update, and did it via apsona in a couple of hours.
