Add message to confirmation email

I would like to add the following message to the email confirmation that is sent to the customer.

"If your order does not arrive within 14 days from the date of your order please contact us."

I don't totally understand how the email and customisation works.

Could someone tell me what I need to edit?

You could edit the file /includes/languages/english/YOUR_TEMPLATE/checkout_process.php (if the file doesn't exist in your template's override directory, copy the file from /includes/languages/english/checkout_process.php first) and change

define('EMAIL_THANKS_FOR_SHOPPING','Thanks for shopping with us today!');

to

define('EMAIL_THANKS_FOR_SHOPPING','Thanks for shopping with us today! If your order does not arrive within 14 days from the date of your order please contact us.');
