Can I remove the "go to checkout"?

I'm trying to stream line my shopping cart.
I'm having lots customer drop offs during the check out procedure.
I'm trying to make it less confusing.

Is there a way in the admin to disable the "go to checkout" feature?

Not in admin, no.

One way would be to add something like this to your stylesheet:

#shoppingcartBody .button_checkout {display: none;}
