I can I change the Order Confirmations to html instead of plain text?
I have made this true: Use MIME HTML When Sending Emails
and this is set to html, Email Admin Format?

Every customer can set their own email format preference.

So if you're complaining that your admin-copy of emails isn't in HTML format, you'll also need to ensure that the customer account you've created on the storefront using the same email address as your admin-copy email address is set to use HTML format for those emails. Otherwise it will override those other settings you mentioned.
