Running a 'Showroom' Store with Shopping Cart turned OFF - need help on a few tweaks

Version 1.5.1 installed from scratch via zc_install

My store is going to be about as simplistic as I can make it - buyers contact me for shipping information, and I send them a PayPal invoice outside of Zen Cart. The Current setting is "Showroom with Prices".

The Show Room text has been changed to a Contact Us link.

I am curious if I can retain this Show Room simplicity, yet have a second status for a Product which I can change the text to read "On Hold". I was hoping that putting the product temporarily out of stock or available at a later date would do it, but that just drops the product completely. Or maybe I am doing this wrong.

I'm not sure I understand exactly what you're asking, but check Admin - Configuration - Stock - Products status in Catalog when out of stock should be set to

Also, you can turn the shopping cart process off by Product Type, so you might be able to use a different product type for the products that need to be handled differently.
