Change fields in order confirmation emails

What file do i have to change to change the order confirmation emails.. i've looked at checkout_process.php but that only displays the text that shows up in the email.. i'd like to add another field from the products table to this email - to place right next to the item's model number.

not sure i understand?? i'm guessing in the order.php file - which folder is that in? and what did you mean by 'class'??

one more thing as you seem to know you're way around zen pretty good.. in my previous shopping cart software, we received an email confirmation for every order - sent to our admin email address. This email was different than the one the customer received. from what i see so far in Zen, the same email goes to the customer and the admin.. how difficult would it be to send a different email to the admin.. the reason we need this is that we have a different product model number that we send to the dropshipper than the one that shows on the current order confirmation.. i've added the new model number to the products table but that's as far as i got..
