How do I hide the "Add to Cart" button on selective products?

We have products that we have that are "For Display Only" or "Not For Individual Sale" -- essentially they're parts of larger whole but we want customers to be able to see the individual parts.

How can I hide the "Add to Cart" button on these products only?

Even better, how can I replace the "Add to Cart" button with something else, like "For Display Only" or "Not For Individual Sale"?

You could use a different product type for these products and just specify in the product layout that the product type does not add to cart.

or you could just hide the add to cart button with a page-specific css file.
