Is "order status" strictly a manual function? Is this something that the person who processes the orders changes manually when they ship them -- or does ZC change this somehow?

Manual unless your shipping software "Notifies the marketplace" or makes the change.

ShipStation which we use to print USPS-CBP and CPP labels, UPS labels and Fedex labels has a feature which changes the order status when the label is printed. I don't remember if Stamps.com had that feature.

Payment modules also make changes to the status. For example if PayPal is used in an authorize only situation, then the status is updated upon payment. Additionally the default code will "reset" the status if batch processing is performed inside of paypal; however, a solution to this is provided at: http://www.zen-cart.com/showthread.p...72#post1259872
