Was looking to expand on this section of the checkout process (Step 2 of 3).
Like adding "International Orders must pay using Check or Money Order. Orders don't ship until payment is received."

Using your example, I found this define and changed it to fit my needs.

define('MODULE_PAYMENT_MONEYORDER_TEXT_TITLE', 'Check/Money Order<br>International Orders must pay using Check or Money Order.<br />Orders will ship as soon as payment is received.');

Works just as I needed!
