I was googling my entire life away before you replied.
I read something about hosts setting up something called Varnish Cache incorrectly - which could cause this issue.
I will inform my host of your solution.
One more thing DrByte,
can I tell whether host is caching php by looking at php info?

then, what if they aren't caching php?
You asked whether phpinfo could tell whether it was caching anything. I simply replied saying I don't see anything in there that specifically says PHP is configured to cache anything.
But that doesn't mean your host doesn't have a hundred intermediate things in place to cache output in the name of "speeding up your site", but have it misconfigured so that it's caching everything instead of only caching static pages.
Sort it out with your host.
