Forgive me if I have overlook it, but I have googled with no results. Looking for a way I can update my stock without having to go to each item I would like to pull the items up in a category and update the stock this way.

Look at the plugin EP4 - it allows you to export your data to a spreadsheet , modify it, and then upload it.
