Since you said you've restored your site from an older date, your older log files are no longer relevant to today's troubles.
So, delete all the *.log files in your /logs/ folder.
Then click around your site, and it should generate new logs.

How can I access? Every page on my root site is not visible. I even tried visiting https://gelcandlecompany.com/index.php?main_page=login and no log files appear all I see are 3 files 2 index and 1 htaccess file.
I still get a 500 error without a redirect to anything. So if after refresh of the directory in your ftp program no log files are being generated, then you will need to review the server logs (host may need to help), to identify what is going wrong. It could also be that there was an improper change made to includes/configure.php which I believe I have seen cause this type of issue...

I will check the server logs..... I did find a debug file generated in cache folder.
It shows the following:
