Yes, you can exclude certain products or categories with the Coupon Admin. Create your coupon, save it then click Restrictions.

One other question about this. If I restrict a top level category, does it restrict all the subcategories as well or do I have to do each subcategory individually?

Also, is there a way to copy an existing coupon?

No, there is not a way to copy an existing coupon at the moment.

And yes, if you deny a coupon from a category, it is also denied for all children of that category as well.

Whenever I have clicked on Restrictions in the Coupon Admin, it always says there is "No Input File Specified"

What version of Zen Cart are you using?

You might want to reload your /admin files if you are having problems, assuming you have no custome /admin files ...
