Broken text in order confirmation email

Thanks in advance for any help.

when i get the order confirmation email, it looks like this:

10 x Emily Taylor Desired Elegance - Ring 1480 (1480) = $145.00
size 7
------------------------------------------------------
Sub-Total: $145.00
: $11.24
Table Rate (Best Way): $17.95
Total: $174.19

Delivery Address
------------------------------------------------------

the string "Sales Tax" (or whatever is supposed to be there) is missing, and the customer would like "Table Rate (Best Way)" to e changed to "Shipping and Handling"

If someone could point me in the right direction to fix this it would be appreciated.

i looked in includes/languages/english/checkout_process.php and there is text there but it doesn't look like what is being used.
