Expanding the categories

The folder structure is wrong in the zip download.

move includes/modules/YOUR_TEMPLATE/category_list.php to /includes/modules/sideboxes/category_list.php.

I have followed these instructions... and it... didn't show anything below the header.

If you click on the category. Home page is fine.. but it still doesn't expand.

Unless you want all of the products to display in the sidebox, a better bet is to use the Uncollapsed Categories Tree mod by fragfutter (available from his site, or bundled as an option with Categories Dressing in Free Addons). That mod just works out of the box.

Did you use the Categories Dressing for your Categories section? And is that how you eventually were able to show all the products under the categories?

I wish I could tell you what was done to get it to eventually work... but I cannot recall exactly how to recreate the steps

It's a combination of the Uncollapsed Categories Tree bundled with Categories Dressing, and BetterCategories. You could do it all with Categories Dressing and have more semantic code and more flexibility for customization.
