Adding & Sorting New Products

I build and manage stores for recording artists. When they want to add a new CD, I cannot seem to figure out how to make that new product "highlight" in the New Product box, as well as come up first in the category list. Right now, I've got every product added since March coming up as "new" when they're obviously not. I've read many of the threads about sort order, attributes, etc. and just can't seem to get my head around this. PLEASE HELP!

In the Maximum Values near the bottom is the

New Product Listing - Limited to ...
Limit the New Product Listing to
0= All Products
1= Current Month
7= 7 Days
14= 14 Days
30= 30 Days
60= 60 Days
90= 90 Days
120= 120 Days

On each of the listings ... you have a Default Sort order that can be set ...
