Admin->Tools->Developers Toolkit
in the first field, type "_subject" (without the quotes)
in the first pulldown menu, choose ALL language files
click Search
You'll see a list of files where email subject-lines are defined. Edit your files as required and re-upload them. Best to use the overrides folder-structure where possible. Overrides are explained here.
