there are things like... "reviews" "language" etc... i want to make different categories instead of these... where do i go to do this? do i just rename the folders??

Could you be more specific on what you want to do? You can turn the sideboxes on and off in the Admin> Tools> Layout Boxes Controller. You can change the names of the boxes with the main language file.
