The products on my site are hand made so there no need for a quantiy of product option in the admin or anywhere. How do get rid of the quantity option??

Just hide the quantity box ...
In the Products you have a setting for:
Products Quantity Box Shows: Yes, Show Quantity Box No, Do not show Quantity Box

NOTE: to prevent more than 1 being added once the first one is added be sure to set Maximum 1 and it will clean the cart if someone tries to add more than 1

You might even want to turn off the Multiple Add To Cart option on the product listing so that quantity fields aren't displayed. Admin->Configuration->Product Listing->
Display Multiple Products Qty Box Status and Set Button Location
set to 0

Is there a way when looking at the product listing for a category to have the spaqce by the Add to 1 instead of 0? I the listing itself it has a 1 in the qty box, but not in listing mode.

When the Multiple Add to Cart button(s) show then the Add to Cart Qty Box is 0 ...
NOTE: You don't want the customer to have to delete what they do not want to add to the cart or delete later on the cart because you added too many things ...
When the Add to Cart button with Qty Box shows per Product then the Add to Cart QTY is 1 ... (or the minimum qty)
NOTE: qty adjusts based on how many are in cart and minimum qty set for Product ...
