Only allow ordering of SOME products

Hello all!
I have an interesting need. I need to build a site that only sells a few products (basically gift certificates) that are able to be added to cart like normal. In addition to this I want the ability to display items that will display products, but will not let a user order them (not show ordering functions).

Does anyone know how I might be able to offer ordering of some products, while showing other products while not letting an end user order them?

if *nobody* should be able to order these products *ever* ... then delete them and recreate them as "Document-General" products. These can never be added to cart, and are for informational purposes only.
