Modifying Orders... frusterating distributors

Sometimes, when I am selling things to people, they are subject to change after the fact of the order.

For instance, maybe I am allowing a group of my associates from a certain website to get a 5% discount. But, for some items, I don't even make 5% of the price (horrible, I know). So can I go back and change that perticular item, (emailing the customer to let them know of course)?

Or, since my shipping system, two of my distributors use flat rates *so i use a table method for them* and 1 other uses UPS, is there a way, that if by accident my customer clicks UPS on an item that requires flat rate, that I can go back and change it?

Or... do any of you have similar situations with your distributors, and how do you deal with it? It's quite frusterating at the moment... well, just getting set up in general is frusterating, any advice, insight, etc, would be greatly greatly appriecated.
