As in my previous post, I have managed to use the over ride to turn off / on sidebars on the individual page using the over ride system but I would like to further this by one step.
Can I use the same over ride to control individual EzPages ? Or is this an all or nothing wherein ALL ezpages have the boxes or all ezpages don't ?

EZpages is all or nothing. If you need to control certain pages then add additional pages using the define pages.
