Yes it is,
in your admin go to: configuration\product listing, and set Display Product Quantity to 0.

Thanks for your help. I've done that, but now zencart isn't keeping inventory at all. I'd like to track my inventory, but simply not let the public see unless I have to show an item is out of stock. Is that possible?

Thanks a lot, it was set to false. Should I also set check stock level to True? It is disabled from appearing on screen. Also, since a web designer set this up and left me high and dry when she changed careers (don't ask), I don't know how to manage stock. Each item will need updates. Can you tell me how to proceed?

"Check stock level" will show a notice to the customer if they're attempting to order a product that has insufficient stock on hand to fulfill their order.
If you have Allow Checkout set to true, then the notice is simply an alert, and will not hinder their ability to finish checkout.

If you think your stock levels are currently not right, you can copy and paste the data from your 'products with attributes stock' (from your manager/catalog) into an excel spreadsheet (or even into word, if you do not have excel installed). Its easier to walk around with a few pieces of paper, than with your pc when you go and do a count..LOL
