There's a template that I'm wanting to use but it says that it's only compatible with version 1.2.5 (or something to that effect). Is it impossible to upgrade? What do I need to look at changing to make it compatible. I guess this would be a matter of what is different between the different versions.
I'm a novice at this, is it an undertaking I should pass on?

The undertaking depends on how complicated the template is and how far from the stock look it is.
