Is it possible to create a custom sort box? The default has alphabetical and numerical, but I would want to sort the products per a custom set. Would I be left to doing a great deal of code editing and db modification?

Well Yes if the values for your custom set are not currently in the DB...

So if I am thinking this out right I would have change where the code is included for the sort feature to include my custom form, and then add a new field in the products table with the desired options and then edit the zen sorting and display options.
