I sorted the problem with the email. It was that my account had run out of room as the host had reduced the amount of memory available to me. That's all sorted now!
BUT...There's another problem. When sending an email through admin, nothing arrives anywhere. I've read somewhere about being able to look at a log to find out where the problem is but, I don't know how I go about doing this. Any ideas?

Zen Cart does not do any logging of emails.
However, it *can* store sent messages to an archive, which you can view for historical record-keeping or to determine whether Zen Cart actually generated the message or not. This is the "Email Archiving" option in the Email Settings of the admin configuration panel. This is documented as #10 in the email troubleshooting document I referenced earlier ... which I'll mention again here:

If the emails *are* showing up in the archive, then Zen Cart generated them. If they never "arrive" to their intended destination, then something is dropping them *after* they leave Zen Cart.
Also note that Zen Cart uses the *same* email subsystem for *all* emails sent, regardless of which page they're sent from, and regardless of whether they are sent from the admin or the storefront.

I've installed the archive search, tried to send a few emails and, nothing appears in the archive. It looks like zencart isn't generating my messages when I try to send an email through the admin.
Again, using the 'contact us' on the website works fine though.

I should mention that emails sent in 'Contact Us' appear in the archive.
Ok, another thing.
When I go to send a direct email to 'administrator' it arrives ok and goes into the archive.
If I try to send a direct email to a customer in the same list, nothing arrives or goes into the archive.

I am having the same problem. Email works good for ,Member joining, Placing an order, Order status.
Email works bad for Send Email,Newsletter, Coupons and gift certificates.
I just a test in send email to myself. I am my only customer.
Email 222 worked fine.
Email 333 no show.
Email 444 no show
Certificates and coupons have not worked yet.
Newsletter has only work on time out of ten.
The data bar on the top say email sent successful.
Did I miss something?
This means Zen Cart prepared and sent the email to the mailserver for processing.
What the mailserver did with the message after that is outside the control of Zen Cart.
If it doesn't like the format in which it was received, then changing the email transport method, or the line-ending method, or the "emails sent from known domain" settings may help your situation.

What is line ending method?
Correction : "Email Linefeed" .... those are all settings in Admin->Configuration->Email Options
