You should consider using v1.3.6. Many security updates and enhancements since 1.3.0. (1.3.7 is likely to be released shortly http://www.zen-cart.com/forum/showthread.php?t=54424)

Some items on the product info page can be turned on/off via admin.
Admin>Catalog>Product Types (By default 'Product - General' is most often used)

To the right you'll see 'Edit Layout' which allows you to manage switch-able items.

For actual layout, edit your template override copy:
includes/templates/YOUR-TEMPLATE-DIR/templates/tpl_product_info_display.php
