I am trying to customize my header on my zencart. I am having some problems such as the way the header is setup. I used a test store setup and now I have some links that do not want to go away.

I am trying to delete these links all together and replace them with HOME, ABOUT US, CONTACT US, LOGIN/LOGOUT, SHOPPING CART, CHECK OUT
HELP!

Your image was not dicernable...so guessing that what you are referring to are the categories in the header....
admin > config > layout settings > Categories-Tabs Menu ON/OFF > set to "0"
