can I setup express checkout in two shopping cart, with one paypal account?

Yes.
Simply configure each store as if the PayPal account was designed for it.
Zen Cart knows how to interact with it regardless whether the account is used in multiple sites..

The Zen Cart PayPal module is smart. It will return to the right place.
