removing item from customer order?

I was wondering if there is a way to remove and item from a customer order?
The customer ordered something that we no longer had, and I would just like to keep everything organized and right.

I can't have it showing the customer ordered 2 things when she will only be recieving one.

This is a very good question. I hope someone has a response to this that could help us newbies.

How do you edit a customer order after it has been placed? Adding or deleting items, shipping methods, etc?

There is a nice moule called Edit Order that may do the trick.
You will find it under the Download section/Admin Tools:
