Configuring different shipping mods for differnt products?

I have many different product. I would like to use the usps module for all but one product. I have that set up fine. I want to do shipping for the other 1 product on a per item or flat rate basis. I know how to set up those modules. What I am wondering how to do is how I can set it up that only the the 1 product displays a flat rate option at checkout while the others only display the usps rate.

What happens if the customer buys that 1 product plus other products that use USPS?
