I shut off the "date added to catalog" and it still shows up. I must be configuring it wrong. I tried a 0 by itself. Help.
Also, is there a way to make the telephone number NOT required?

Look in the Minimum Values for Telephone ...
Where are you seeing the date added to catalog and where did you set it to 0?

Then probably you are trying to turn it off on the product _info page ...
The Product Types each have their own settings for the product _info pages ...
Catalog ... Product Type ... Pick a Product Type ... Click EDIT LAYOUT button ...
