change email copyright

We are created a zen cart mod for a client and they dont care about the zen cart link on their index page, but they want it off the emails that they send to their customer. How do you change or edit that copyright in the footer of the emails?

I tried using the developers tool kit, but it could not find it. Any help would be much appreciated. Thanks!
