Remove the middle step

All I am doing is selecting the product and then selecting the attribute. I am not adding or changing any other values!

When adding an attribute to a product - You need to do 2 things - select the attribute name and then select an attribute value the is already associated to the attribute name.

Then to add another repeat the above but select a different attribute value.

The attribute values must be associated with a attribute name when setup.
