OK, I have always done it file by file so this will be a new trick for me. So I drag the whole file (Oz date) over to public_html (rename admin to MY_ADMIN) and it will put the files in the right place?

Ahhhh No....
Go one directory further down from the Oz_date directory, where you see the admin & includes directories
These represent the admin & includes directories in the root of your zen-cart site
In your ftp program go to the root of your zen-cart site. In the files window you should see an admin & includes directory (among many others).
Go back to the files on your computer. left click on the admin directory & drag it to the files window in your ftp program & drop it there. It will drag the directory structure over & ask if you want to replace english.php Answer yes ONLY after you have previously backed up this file.
Now drag the includes directory across & drop it in the ftp files window. Because it uses overrides it should not ask if you want to delete english.php here (unless you have an english.php file in your overrides directory.
Before doing this you must rename the YOUR_TEMPLATE directory to the name of the overrides directory that you are using.
If you have them in corectly the date should now be in Oz format in both admin & catalog.
If this seems a bit too scary, then just copy across the files as you have been doing previously, there are only 2 of them.
PS: Just reread your question. If you have renamed your admin directory for security reasons, then yes rename the source admin directory to whatever you are using as a admin directory name.
