How do I turn off the category count so the number of categories doesn't show up in my navigation.

admin -> configuration -> My Store -> Show Category Counts (set to false)

Ok this is left there for compatibility with osCommerce (perhaps), but a better place would be to put it with the rest of the Category Count options (admin -> configuration -> Layout Settings).
Overall is not that easy to find this options around...
just my 5 cents...
