How can I move the Categories-Tabs Menu form the center to the top of the header or any place at all.

In the includes/templates/your_template/common/tpl_header.php file (if you dont have it copy it from the template_default/common directory) find the bof and eof for the cat tabs and reorder it by moving the complete block up or down in the order
