Shipping override per product

I'd like to be able to do the following:
1. Set the shipping options for all products.
2. Override the global shipping options for a single product with independent settings.

For instance, I need to set a special order (or handling) fee for certain products, but not all products. I don't see a way to do this without making a global setting that affects all products.

I'd like to also be able to apply flat rate shipping to a certain category of products or individual products, but not all products.

The shipping tare shouldn't be a global setting. The package size and weight varies from one product to the next - so it seems that it should be relative to individual products.

Can this already be done? I'm not seeing how to configure shipping for individual products.

As this is on a per Product basis with no rhyme or reason it would be easiest to add a new field or flag for this ...

If you code it correctly, you can also make it variable on a per Product basis such as:
products_shipping_handling_fee

Now any product can have a handling fee and you can make them whatever amount you want ...

On the collect_info.php you can set a default for this amount if most of your products use a certain amount or set to 0.00 if that is safer ...

This would require some custom coding ... more than I can write off the top of my head without developing the whole thing over a few hours/days ...
