Several Questions About Stock stuff <3

I have several questions, as I'm still very new to the entire shopping cart deal. I have a basic knowledge of coding, thankfully, so I'm not completely lost but navigating through my config and site I've found some things I'd very much like to change.

1) Is there a way to mass update product quantities? We have over 3000 products and editing each one individually will be hell. So if I wanted to set the quantity of all to 'unlimited' is that possible?

2) Is there a WAY to set products to simply 'in stock' or 'out of stock' rather than have a quantity? As that's the only attribute I have access to as my warehouse works on drop shipping. I ask because I noticed that despite setting my config to show out of stock items on the page, they don't show up on the site once I set them as out of stock. It'd be so much easier if I could skip the quantity thing on the new product form and just click the button where the stock's listed to set it as 'in stock' or 'out of stock' and leave it at that.

3) Unrelated to Stock, but I didn't want to clutter up with more boards. I have SSL installed and my SSL attributes in configure.php (in both admin and includes) set to true but for some reason it's not switching.
