At this point we're only worried about the heat sensitive items. So we would set an option or assign them all to a group and only allow them to be shipped Next Day.

So we have
Group A Products - Regular Shipping based off the UPS Module.
Group B Products - Next Day only based off UPS Module.

Any combination between the 2 would result in Group B Products shipping rules taking precedent.
