I just bought a SSL which gives the domain i am moving to encrypting capability. What do i change while setting up the store on the new server as per the tutorial? do i type https://jacobzladder.com for both the secure and non-secure servers? or what? thanks ladies, gents, serpents and wizards! couldn't do it without ya!

Your second question.........yes, you just move all the contents of your stores' folder to your root directory, then be sure to reflect those changes in both config.php files.
    Your first question.....not sure.

Teach them to Zen and they will OWN a shop tomorrow!

Yes, you would just have https in the URL for both servers. This would cause your webserver to encrypt everything.

I don't know what your store is, but if you don't NEED to have everything encrypted, it is better to not do that. ZenCart will switch to https when vital information is moving (passwords and credit card numbers) on its own. Encrypting the whole site will place your server under a considerable amount of undue strain that can impact your site's performance.

That said though, you are on the right track if that is what you want to do.

WHY would you want your entire catalog secure,
ONLY the login, account pages and checkout need to be secure,

there is no personal information being exchanged on the view product page
