Is there a way to display Out of Stock items in the catalog? Aside from not letting the stock hit zero?

Yeah there's an option in the configuration that lets you keep Out of Stock items ACTIVE.
Configuration > Stock > Products status in Catalog when out of stock should be set to > Set to 1 (Leave Product Status On).
That should do it.
