I was wondering if you have suggestions on how I can tweak the layout for this type of product which uses attributes...

You put your attributes in a table inside the description.
This is unrelated to the mod., precisely the scope of the mod is tableless layout
Your attributes are loaded normally, first Option Names (you have layout options there), then Option Values, etc.
There is an in-depth explanation for this in the Zen Cart Manual.
Buy it, it will help you a lot.
