Got to www.yoursite.com/docs and start there. Then head to the tutorials at zen-cart.com and the wiki (link found above).
Take it from someone who's been there and done that, you need to take these step by step in order to learn what you are doing.
You also have the option of clicking on "Got the book?" at the top of the page. Haven't got it myself but it is endorsed by those I trust explicitly.
