I've tried using the CSS flyout menu and category dressing downloads but didn't really like the look and feel of either one even after I'd done a bit of customisation. Is there a simple way of replacing the text links in the categories sidebox with my own button image?

You can disable all the other functions of Categories Dressing and use only the image link function.
Just follow the directions in the readme for disabling each section.

Then you can apply whatever styling you like to the rest.
