I've tried to figure out from the FAQs etc and I'm stumped.
If I have 35 scents of soap that sell 3 for $$, how do I set up a text area for the customer to input the desired scents?

In Attribute Controller, add a text option name called "Scents Required" or whatever, then add that text attribute to your product.
If your soaps come in packs of 3, in which you can choose 3 seperate scents, then you might consider 3 seperate text attributes.
ie.
Scent No1
Scent No2
Scent No3
I tried that and got message " Attribute Option and Option Value Do NOT Match - Attribute was not added - : TEXT"

Works just fine for me. You can see it here
Here's the method:
1. Catalog > Attributes Controller
2. Click Option Names
3. Add your TEXT Option Names (ie. Scent No1, Scent No2, etc)
4. Click Attribute Controller
5. Select the product you wish to add the attributes to and click "Dispaly"
6. Under "Option Name", select "Scent No1 [Text]" and then under "Option Value", select "TEXT [RESERVED FOR TEXT/FILES ONLY ATTRIBUTES]"
7. Click "Insert"
Repeat steps 6 & 7 for "Scent No2" and "Scent No3"
