How do I turn off/remove the categories above the dropdown menu? This is for the Apple Zen

That's not even part of the template. Go to your admin, and turn off "Categories -Tabs Menu" under "Configuration", "Layout Settings". Those categories would be on until you turned them off, no matter the template.
