The permissions on your override directory needs to be 777 for editing.

Ok so that actually didn't work. It worked for like a second, but only the files from the default template are showing up in admin, and if I delete them all, then it goes to the classic template....
I have found that if I manually copy define_xxx.php to my template directory (/includes/languages/english/html_includes/my_template/), the define pages editor will then use that as the version to work on.
